Déjà because here the organic eggs are horribly expensive: from about 4.5 euros for a box of 6 ...
But mostly because all the eggs (I checked) have a use-by date rather amazing ...
3 months it's still a lot ... The first time I saw it I thought it was a mistake!
It is true that here, as in the U.S. (I confess I do not remember what it was in GB) in the supermarket eggs are stored in refrigerated shelves, which should logically increase shelf life compared to France (or Mexico for that matter) where eggs are not considered as products to be cool. But I do not see the United States dates as far consumption limits.
So it is quite difficult to find eggs "fresh" in general when I find eggs that were laid less than 17 or 18 days before I buy, while in France or Mexico eggs 3 weeks were considered "restricted", with almost one foot in the trash.
So far we have not been sick ...;-)
